  •   Sodium propionate appears as a colorless, transparent crystalline or granular powder, odorless or with a slight acetic-propionic-butyric aroma. It is stable to light and heat but readily deliquesces in moist air. It dissolves easily in water and is slightly soluble in alcohol. Sodium propionate exhibits broad-spectrum antimicrobial activity against molds, yeasts, and bacteria—though it is ineffective against yeasts. Its antibacterial properties are comparable to those of propionic acid. It can be used as a preservative and anti-mold agent in products such as pastries, soybean products, dumpling wrappers, wonton wrappers, fresh-cut noodles, and cheese.
