The oral LD50 of potassium cinnamate in rats is 5.58–6.78 g/kg, classifying it as a non-toxic product. After absorption by the human body, potassium cinnamate is metabolized into phenylalanine, which is then excreted. A small portion of phenylalanine can be further converted into tyrosine via the enzyme phenylalanine hydroxylase, with no adverse effects observed in humans.
